100g butter

3 tablespoons golden syrup

100g granulated sugar

150g plain flour

150g medium oatmeal

2 generous teaspoons ground ginger

1 teaspoon bicarbonate of soda

150ml milk

Preheat the oven to 130°C. Line a deep 20cm square tin with non-stick baking paper (if the tin has a loose base, fold the paper to fit but don’t make cuts in it).

Put the butter and syrup in a saucepan and melt over gentle heat.

Put all the dry ingredients in a bowl and mix together well. Pour in the syrup and butter mixture. Add the milk and stir well to make a very sloppy mixture.

Pour into the lined tin and bake for about 1¼ hours, until the parkin is set and firm to the touch. Don’t open the oven door during the first hour, or it will fall.

Leave to cool in the tin, then remove and wrap in foil or store in a tin for 2–3 hours before cutting.
